Mimi's Recipes

Mimi was an excellent cook. Below are some Austrian recipes that her family loved.

Austrian Pancakes/Crepe Batter

3 eggs (beaten)
1/4 tsp. salt
2 c. flour
2 c. milk
1/4 c. melted butter or cooking oil
(add an additional 1-2Tbs. of Milk for thinner batter)

Mix all ingredients in a bowl.
Set stovetop burner to medium heat. 
Pour a thin layer of batter into a greased frying pan. 
Turn pancake as needed and cook until light brown. 

Spread cut peaches, jam or whatever you'd like over pancake. Roll pancake and sprinkle with cinnamon and sugar, or powdered sugar.


Vanilla Crescents

Cream: 

1c. butter (unsalted)
3/4 c. sugar
1 tsp. vanilla

Add: 1 c. ground nuts
2 1/2 c. flour

Mix well. Form crescents. 
Bake @ 350 or 375 until lightly browned (about 9 min). 
Roll crescents in powdered sugar.
